Ingredient Notes
To make honey glazed carrots you’ll need:
- carrots – I like to peel the carrots and I always use organic!
- olive oil – avocado oil or melted butter would also be delicious
- salt, garlic powder, pepper
- honey – look for real, pure honey.

We also used a silicone basting brush and parchment paper.
SUBSTITUTIONS FOR HONEY CARROTS
Vegetables: We haven’t tried this exact cooking method with other vegetables but I think it would probably work well with brussels sprouts.
Olive Oil: You can substitute avocado oil, butter, or ghee.
Spices: We used simple spices in this roasted carrots recipe but you can easily sub in other spices like dried herbs or paprika!
Honey: Any honey will work in this recipe, but we try to use locally made honey if we can find it!
Does Carrot Size Affect Flavor?
Typically smaller carrots are more flavorful than larger carrots.
How to Make Healthy Honey Roasted Carrots

- Toss prepped carrots in oil and spices on a parchment lined baking sheet. Bake at 400° for 30 minutes, rotating the carrots every 10 minutes.

- Immediately, brush honey on each of the carrots. Return to the oven for 1 minute to glaze then serve.
Tips for the Best Honey Glazed Carrots
- An easy way to test the doneness of your carrots is to take the point of a paring knife or any knife and see if it easily pierces the flesh of the carrots.
- Silicone basting brushes are a great tool to have on hand in the kitchen for many things, but especially for basting carrots!

Roasted Carrots Recipe FAQ
We don’t recommend parboiling the carrots for this recipe.
You don’t need to for food safety, but we prefer the flavor of peeled carrots. Unpeeled carrots can have a bitter taste.
We haven’t tried maple syrup instead of honey when making these baked carrots, but it may work!
How to Store Roasted Carrots
Storing: These carrots will last in the refrigerator for up to 4 days in an airtight container.
Freezing: We don’t recommend freezing roasted carrots. They will get an odd texture when frozen/thawed.
Reheating: You can reheat this recipe in the microwave, toaster oven, oven, or on the stovetop in a pan. We recommend the toaster oven or oven to get that crispy edge on the carrots!

Easy Honey Roasted Carrots
Ingredients
- 1.5 lbs carrots about 8 large carrots
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/8 teaspoon black pepper
- 1 tablespoon honey
Instructions
- Preheat the oven to 400 degrees. Prepare a large nonstick baking sheet or line a regular baking sheet with parchment paper.
- Wash carrots well and peel the skin off. Trim the top of the carrot and leave it whole.
- Take 1 tablespoon of olive oil and add to your baking sheet.
- Take your peeled carrots and place them on the baking sheet, tossing them around to evenly coat in oil on the baking sheet.
- Sprinkle salt, pepper, and garlic powder on top of your carrots, shaking the baking sheet a bit to coat all sides of the carrots with seasonings. Place your baking sheet in the oven and set a timer for 30 minutes.
- Rotate the carrots every 10 minutes or so, you should see some caramelization from the natural sugars of the carrots as you bake them.
- When your timer goes off, remove the baking sheet from the oven and add your honey to the carrots immediately. I baste them with a silicone brush to evenly coat on all sides but you can easily move the carrots around with a pair of tongs to coat them. The honey will quickly bubble and loosen on the hot pan.
- Return the pan back into the oven for one minute and this will give the carrots a beautiful glaze.
- Remove carrots from your baking sheet, plate, and enjoy!
