Preheat the oven to 400 degrees. Prepare a large nonstick baking sheet or line a regular baking sheet with parchment paper.
Wash carrots well and peel the skin off. Trim the top of the carrot and leave it whole.
Take 1 tablespoon of olive oil and add to your baking sheet.
Take your peeled carrots and place them on the baking sheet, tossing them around to evenly coat in oil on the baking sheet.
Sprinkle salt, pepper, and garlic powder on top of your carrots, shaking the baking sheet a bit to coat all sides of the carrots with seasonings. Place your baking sheet in the oven and set a timer for 30 minutes.
Rotate the carrots every 10 minutes or so, you should see some caramelization from the natural sugars of the carrots as you bake them.
When your timer goes off, remove the baking sheet from the oven and add your honey to the carrots immediately. I baste them with a silicone brush to evenly coat on all sides but you can easily move the carrots around with a pair of tongs to coat them. The honey will quickly bubble and loosen on the hot pan.
Return the pan back into the oven for one minute and this will give the carrots a beautiful glaze.
Remove carrots from your baking sheet, plate, and enjoy!
