I added a 1/4 tsp ground red pepper flakes to the roasting mix. Then after they were done I sprinkled citrus zest over it immediately.
The freshness of the citrus with the back heat of the red pepper makes this recipe addicting.
I first used tangerine because that’s what I had on hand. I’ve used many different citrus varieties and I found for our taste the tangerine #1, grapefruit #2, lime#3 and orange #4.
Be bold and experiment with combos or new herbal combinations.
My Greek family taught me very young to smell what you want to season in one palm and the herb or spice you wonder about using in the other palm and smell them together. If the aroma is sweet and inviting it’s a go to try. If it makes you snap away because it’s bitter or sour smelling it’s not a good idea to use it.
I’m in my sixties now and still use the method., especially when trying out new foods.
