Ingredients to make this recipe
For these Sweet Potato Home Fries you’ll need:

- olive oil – butter would also work well
- vegetables: Just an onion and bell peppers for color and flavor.
- sweet potatoes- make sure to cube them in even squares
- seasonings: Ground paprika, garlic powder, salt, and pepper
We made these in a cast iron skillet, but you could also use a nonstick pan.
Substitutions & Additions
Olive Oil: You can substitute avocado oil, butter, or ghee.
Onion: You could replace the onion with a shallot.
Peppers: Feel free to sub red or orange bell peppers.
Sweet Potatoes: Sweet potatoes with a red or orange skin, like Garnet or Jewel are great options to use for sweet potato fries because they have the traditional orange flesh and sweet taste. If you prefer russet or gold potatoes, try our Roasted Breakfast Potatoes.

How to make Sweet Potato Home Fries

- Heat a large skillet over medium heat. Saute onion and bell pepper in olive oil until tender, about 5 to 7 minutes. Set aside

- Add sweet potatoes in an even layer to the hot skillet. Cook for 10 minutes. Add water, cover and cook for another 5 to 10 minutes.

- Add onion and peppers back into the skillet.

- Stir together with spices and cook for another 30 seconds.

Storing: Cooked sweet potato home fries will last in the refrigerator for up to 3 days in an airtight container.
Freezing: We don’t recommend freezing this recipe.
Reheating: You can reheat this recipe in the microwave, toaster oven, oven or on the stove. We find these home fries are best when reheated on the stove in a pan with a little bit of olive oil spray.

Sweet Potato Home Fries
Ingredients
- 2 tablespoons olive oil
- 1 cup diced yellow onion about ½ an onion
- 1 cup diced green bell peppers about 1 pepper
- 1 ¾ pounds sweet potatoes diced into ½-inch cubes (about 2 sweet potatoes)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
Instructions
- Heat a large skillet over medium heat. When hot, add olive oil. Saute onion and bell pepper in the olive oil until tender, about 5 to 7 minutes.
- Remove pepper and onions from the skillet and set aside. Add sweet potatoes in an even layer. Cook for 5 minutes before stirring. Stir potatoes and cook for another 5 minutes on the other side, until browned on both sides.
- Pour ¼ cup water into the skillet and cover with a lid to lightly steam the potatoes. Cook for another 5 to 10 minutes, or until the sweet potatoes are fork tender.
- Add onion and peppers back into the skillet. Season with paprika, garlic powder, kosher salt, and black pepper. Stir together and cook for another 30 seconds.
- Serve sweet potato home fries along with eggs, bacon, or any of your favorite breakfast foods.
